Our cuisine has its roots in a lush land, warmed by the Maronti sun, and in the memories of those in our family who always believed that eating well was the best way to feel good.

The roots: a nourishing story
Even before the hotel, this land was here. And before the guests, there was a man who worked it: Franchino, as everyone called him, though his real name was Francesco Paolo. The vegetable garden at Hotel Olmitello is rooted in that story. He was both farmer and hotelier, at a time when Ischia was not yet a tourist destination, but an island of work, seasons to respect, and hands in the earth.
After years in Australia, a vast and generous land, he chose to return and settle here. He brought back with him a simple yet profound lesson: the land, and its people, must be listened to, cared for, and respected. That is where it all began. The decision to come home to Ischia, among these hills, and the belief that hospitality also means nourishment: that food is one of the most tangible forms of care.
Over the years, the vegetable garden has grown alongside the hotel, nurtured in part by Mama Luisa — Franchino’s wife of nearly 60 years — who brought the same care to the kitchen as she did to her family. Her rabbit all’ischitana remains one of our guests’ favourite dishes, a recipe shaped by simple, patient gestures passed down through time. Our kitchen is a natural extension of that family vision: authentic, attentive, alive. We still grow, harvest, cook and serve as we always have: no shortcuts, and never forgetting where we come from.

Today, the vegetable garden covers a large area overlooking the sea, in an unspoilt location that can only be reached on foot. No cars can get there, just sunshine and sea air. Work continues thanks to the farmers who worked alongside Franchino and who now carry on this tradition with the same dedication. Fruit, vegetables, herbs, grapes and citrus fruits are grown according to nature's seasonal rhythms. What grows here ends up in the kitchen without unnecessary steps, without losing its fragrance. This is why our dishes taste different.

Olmitello's cuisine goes with the flow. It starts in the morning, with the aroma of coffee, our jams, fresh fruit from the vegetable garden, and the bright colours of the buffet. It carries on into the evening, with ever-changing dishes: something new every day, never complicated, but always authentic. There's always a traditional dish, such as Mamma Luisa's Ischia-style rabbit: a taste of home, a recipe handed down with love.
We also pay special attention to full-board stays, available only to groups and featuring tailor-made menus, especially for those who follow a vegetarian diet. Our chef, having attended many specialist courses, prepares nutritious meals with natural methods and selected ingredients. Breakfast through dinner, every dish caters to our guests' dietary preferences: fresh ricotta, special cereals, raw condiments, and always seasonal products.
We also pay special attention to full-board stays, available only to groups and featuring tailor-made menus, especially for those who follow a vegetarian diet. - Dinner with dishes based on seasonal garden products
- Full board only for groups, on request

- Beach restaurant (open to everyone) serving à la carte seafood dishes
